Ive been intrigued by this recipe all week because of the addition of mustard and decided to make it tonight for dinner with friends. Oh! I let it simmer an additional hour, as I was using a very tough cut of meat. We added scant-by-1-Tbs measures of both mustards and were surprised to find it isnt overwhelming in the slightest, and instead offers richness and flavor without being a dead give-away as a mustard bomb. The beef was fall-apart tender and the carrots were soft, though I did notice that the beef rendered out a LOT of fat. This was absolutely tender and delicious and so worth the extra time it takes to layer the flavors! But you wont have the same body to the sauce. other than that, i used brandy because i didnt have cognac sitting around. Preparing it the day ahead let me focus on other parts of the dinner at the last minute. Repeat with remaining beef. I did hold back a wee bit on the mustard cause Im a heat weenie, but did add in a 1/4 cup of my homemade Apple Liqueur just before putting into the oven for 1 1/2 hrs..(I find the oven does a wonderful job of even cooking w/out any babysitting on my part).
